Potato & Bacon Frittata

Today I would love to share with you one of the recipes that I love to cook for breakfast on the weekend: Potato & Bacon Frittata. This very delicious and filling meal will not only keep your tummy full, it will also give you energy. If you like bacon and cheese then you most probably would love this dish because these two are the main ingredients in this recipe.

Ingredients:

400 gm bacon

4 large potatoes

2 large eggs

3/4 glass of 2 %milk

1/4 tsp salt

1/4 tsp ground black pepper

400 gm cheddar cheese grated

1 large tomato

 

Fry bacon in a skillet and set aside on paper towels. While the bacon is frying, peel the potato and cut it into 1 cm thick slices.

Throw away excess fat from the frying pan but leave a little in the pan to fry the potatoes until cooked as it starts changing colour to a nice golden brown than lay potatoes flat in the cooking tray and then sprinkle the fried bacon on top.

Beat the eggs, milk, salt, and pepper together in a bowl and then pour the mixture over the potatoes & bacon that you placed in the cooking tray.

Spread grated cheese over the top and then add some small cubes of tomatoes on top of the cheese.

Pre-heat oven to 190C and bake it until cheese melts and colour changes to a light brown as frittata gets firm.

Serve with cucumbers or fresh green peas on the side. I personally love to eat this with fruit tea sweetened with honey.
