Healthy Fish Soup With Pearl Barley

The weather is getting colder and colder every day and when I have a chance I personally prefer to stay home and eat some healthy comfort food. For example, I believe that a hot bowl of soup can take the chill out of the fall season and help you stay strong and healthy.
So in today’s post I would like to share with you an easy recipe of healthy fish soup with pearl barley.
Ingredients:
- 1 kg of salmon
- 100 g pearl barley
- 1 onion
- 2 carrots
- 4 potatoes
- 1 Stl. lemon juice
- Salt and black pepper to taste
First of all soak barley in 1 liter of cold water for 2 hours.
At the meantime, cut fish into 1 to 1 1/2 inch cubes and pour them in 2 liters of water. Bring the water to a boil, add lemon juice, salt, pepper and cook for 40 minutes.

At the same time, place barley in a pat with the water in which it was soaked and put on fire, bring to a boil and cook for 30 minutes, when barley is cooked rinse it well. Then take pat with the fish stock of the fire and take the fish cub’s and filter the fish stock through a sieve and retain the stock.
Chop it small carrots and onions and saute in olive oil till they turns golden color.

Pour fish stock in the pat and put on a medium heat and wait till it boils. While waiting cut potatoes into cubes. When fish stock start boiling add potatoes and barley and cook for 15 min, then add fish and onions with carrots and cook another 5 min on medium heat.
