In  today’s  post  I  want  to  share  with  you  guys  super  easy  &  healthy  lentil  soup  recipe. One of the main ingredients of this soup is flaxseed. Based on current research, flaxseed is known as a super-food. Flaxseed’s health benefits come from the fact that it’s high in fibre and omega-3 fatty acids. (In few articles I read on the internet was written that in some cases flaxseed may help reduce risk of heart disease, cancer, stroke, and diabetes.) So by making this soup you not only going to enjoy this tasty lentil soup but you also will be doing a favour to your body.

Ingredients:

  • 1 cup red lentils
  • 4 cups vegetable stock
  • 1 medium size onion , finely chopped
  • 1 medium size potato, peeled and sliced on half
  • 2 table spoon dry mint (to taste)
  • 1 teaspoon salt (to taste)
  • Flaxseed  (to taste)

 Place the red lentils in a bowl and continue rinsing until the water becomes clear.

Place the washed and cleaned lentils into a medium pot with the stock then place cut in half potato into the pot and cook it until potato becomes soft.

While waiting when potato and lentils are cooked wash carrot and shred it, also cut onion into small size squares. Pour a little oil into a frying pan and add the chopped onion and shredded carrot.

When potato is soft put it on the plate, mash it and pour back in to the pat with cooked tender lentils.

Add fried carrots with onions, flax seeds, salt and dry mint to taste. Stir well all the ingredients then wait 10-15 min. for flax seeds to become soft and you will have flax seeds oil in the soup.

Don’t forget to squeeze lemon into the soup before serving!
