Gluten Free Coconut Cookies Recipe

Good day my dear friends,

Hope you all are having a nice relaxing weekend with the ones you love 🙂 What can be better when family/friends get together for supper and spend some good quality time together after long work week. For this special occasion you can surprise them with easy to make gluten-free coconut cookies.

Ingredients:

3 cups sweetened shredded coconut

3/4 cup sugar

6 large egg whites

2 teaspoons vanilla extract

1/4 teaspoon almond extract

Mix coconut, sugar and egg whites in a large saucepan, then put it on the stove and cook over medium heat about 10 minutes until mixture becomes pasty. Stir constantly while keeping mixture on the stove to avoid burning at the bottom. Remove from heat. Mix in vanilla extract and almond extract. Put mixture in refrigerator for about 40 minutes until cools off.

Press coconut mixture into shape you like and place on the baking sheet. Preheat oven to 400C. Bake cookies until golden, about 20 minutes. For those of you who loves chocolate, deep half of a cookie in a melted chocolate and let it cool.

Can be served with glass of milk or cup of tea.
